Ingredients (4 Persons): 100 g of pistachios, 80 g soft cheese (ricotta), 75 g of grated Parmesan cheese, 25 g smoked bacon, extra virgin olive oil, salt to taste.
Blanch two thirds of the peeled pistachios. Then collect them in a mortar along with the unpeeled ones and grind them with the pestle with a pinch of salt. You can even whisk them with a mixer. Fry the chopped bacon in a little oil. Put the obtained sauce in a bowl and mix it with the cottage cheese (ricotta), 100 g of oil, 3 tablespoons of grated Parmesan cheese and the fried bacon; You may put also a couple of tablespoon of water where the pasta is boiling.
Serve with more Parmesan cheese.
