Time: 60 Minutes
Ingredients (6 Persons): 100gr of flour, 100gr of sugar, four eggs, a teaspoon of baking powder, 150gr of Bronte Pistachio Nuts, 100gr of butter, 50gr of icing sugar, a pinch of salt
In a bowl, Whisk the egg whites until obtained a very firm cream and add, while still whisking, half the sugar.
In another bowl, pour the egg yolks and add the remaining sugar, whisk until obtaining a white frothy compound.
Mix together the egg whites and the yolks.
Merge, always whipping and gradually, the flour mixed with baking powder and salt. Grease a cake pan with butter, pour in the mixture and cook at medium heat for about 45 minutes. Let the cake cool, sformarla and accommodate you on a serving plate.
Put the pistachios in a bowl (keep some aside for garnishing), add a tablespoon of water and mash them with a pestle until it forms a soft mush. Add the diced butter and icing sugar and mix. Coat the top of the cake after having removed the crust surface, with this pistachio butter, garnish with pistachios and set aside to serve.
